We have a polo guest staying with us for a day, or two. He is pretty legit, most polo players are. We have been talking about lots of things over coffee, bike polo, mangos, the state of the nation, more bike polo. Now we are making small batch banana muffins. I am literally making them as I blog.
I started with 1 very ripe banana. Then I added 1/4 cup of white AND brown sugar. About 3/4 white and then the top 1/4 I used brown sugar. I added that to the mashed up banana, mixed it and added 1/2 cup of flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of baking soda and 16 turns of the salt grinder. After I mixed all that up I added an egg, and 1 1/2 tablespoons of oil. Now most people use vegetable oil. I used extra virgin olive oil. I mixed a pinch of cinnamon (alright more of a dash) and a bit less of nutmeg in as well and poured it into my lined muffin pan. I baked at 350 for 16 minutes.
Our polo guest was my tester, and he says they are “mmmmMMMMmmmmmm!” So I think that means good things.

Let’s talk headwind/tailwind. Headwind is when the wind is blowing at your face. You ride into headwind. Headwind makes you feel like you are pedaling but really going nowhere. I don’t like headwind. Sometimes I try to give it a chance, it’s okay, this will make me stronger I say to myself. About 10 minutes into the ride I’m over headwind. It lets up for a few moments and you realize how hard you’ve been pedaling! Then you get blasted again. The thing is you can’t give up and turn around, you just keep riding into the headwind.
Tailwind is quite the opposite. Tailwind comes at ya from behind. Makes you feel like you’re going a million miles per hour. I love tailwind, I try to pedal harder in tailwind to make super great time.
Those two things are opposites. Like my old job and new job. If somebody asked me, “Hey Megan what’s the opposite of working in the call center? ” I would say, “Well it is the job I am doing right now.” I made a chart for you. Pretty good right?? It’s a combo bar and line graph.
I made some great strawberry and chocolate chip muffins to snack on at my new job. On account of the running around all the time.
I used a basic muffin recipe from the wholesomedish blog/site. It is a pretty good basic recipe. I just added some frozen strawberries and chocolate chips and bam! They are pretty good. There is a huge event at work tonight so these should come in handy for snacking on the go.
I added another pair of earrings to the Esty (Has1Hour) store. You really gotta check that out, it’s coming along. That’s all, time for muffins.
