We started going to a personal trainer. Today is personal training day, I like personal training day. I try to go in with an open mind, I also want to push myself to do more reps, be faster, get stronger. Yah Bro.  After PT we drink protein in the sunshine, sometimes we get some lunch at the cafe. It is like a little workout date. So why did we get a personal trainer? Well despite riding bikes all over San Jose, we really are not ready for the CF ride.

and this ride is not. Up the hills, down the hills and back up the hills again.

Enter Cameron, our PT. He is all about making us use the power rope things, do sprinters and spiderman push ups. Kettle bell swings and all the power lifts. (I may have made up some of those names) Today it is raining so we won’t be able to work out outside like normal. I am secretly hoping he just tells us to use the run-punch machine. (Elliptical)

Lots of cool things are happening. My polo bike got featured on BIKES OF POLO instagram.  I applied to go back to school, just waiting to sign up for classes. Lots of polo, lots of bike rides. Getting ready for the summer of fun.

Happy Spring

Happy Spring! Today is the first day of spring, I think it is the perfect time to tell you about the CF ride that I am doing. The ride is June 17th, and it involves a lot of climbing, and riding the bikes around Half Moon Bay. This is the reason I built up that Trek, as I will need a geared bike to do this ride.

who had the disease, and she showed me how to live. We had a ton of fun doing stuff together and I am super thankful to have had that experience. There we are in the Redwoods with a giant tree.

 

 

So about the Trek. I rode it at bike party this Friday. Let me tell you what a bike party it was. We dance, we ate Lucky Charms treats, we rode the bikes. I was a speed racer on my new bike.

Gears are great! There were even a few small hills that I rode up like a CHAMP. We had a few friends over before the bike party for a little pre-game. Then we had a small wind down after.

Small side story Our friend dropped his phone at the last checkpoint. He was all “Well it is lost forever.” Then we called it and people answered and gave the address where it could be picked up. It was a great success.  The boys went to pick up the phone and we all packed it in for the night.

Lucky Charms Treats are made like this

1-Package of mini marshmallows

8 cups of Lucky Charms cereal

7-Tablespoons of butter

Melt the butter, add the marshmallows, melt the marshmallows and butter together, add the cereal. Spread that into a greased baking pan. Let cool, put them in the fridge for about an hour. Cut into square and enjoy!

Adventure Day

Yesterday was adventure day, and I took 0 pictures. Today is Pi Day! I have already taken a few pictures.

So on adventure day we took out the bikes. I happen to have a new bike. It is a forest green Trek, and it has gears. (That is the Trek up there, I have named it the Mini-Van)  I am now learning how to ride a geared bike. Don’t get me wrong when I was a kid I had a pretty sick Huffy 10 speed

that I never switched gears on. That is not an exaggeration. I’m pretty sure I tried once got confused found what best worked for me and never looked back, or down.   Now I understand the way it works. It is kind of like driving a stick shift. At least that’s what I am comparing it to for now.

I ran over my first squirrel yesterday on the Trek Mini-Van. Don’t worry, pretty sure that sucker is just fine. Good thing I play polo or I would have ate it hard. Fortunately I have taken more than one ninja ball to the front AND rear wheel. I know how to stay up. Thanks polo, I love you more every day.

Where did we go!? We took the Coyote Creek Trail all the way down to Metcalf Rd.

It sure was an adventure, parts of the trail were closed due to the flooding. We climbed up hills on the bikes, and down hills. We took paved trails and bumpy trails. We rode through some puddles, and decided to not ride through other puddles. We ended up at this great place called Hideaway Lounge. It was dimly lit, Mrs. Doubtfire was playing on one of the T.V’s above the bar and they had Lagunitas IPA. We locked up the bikes and had a few beers. The bartender told us about how the house Mrs. Doubtfire was up for sale and it’s in SF. I tried to convince my boyfriend we should pretend to be buyers and go check it out. Still working on that one. We left the lounge and went home to chill.  All together we did some 19.7 miles or something close to 20. Pretty good day for breaking in the new bike. I think we are going to do great things together me and this mini-van.

Purim

This week at work is Purim. Well really Purim is March 11th and 12th this year. A week-long celebration of food and fun at my job. The children had a carnival and a Purim parade, and today there is a special Purim celebration for employees. If you wear a costume you get a prize.

Purim is one of the most interesting things I have come across at this job. For example, I had no idea it existed until this year. What is Purim? Well it is a Jewish holiday that “commemorates our nation’s miraculous salvation more than two millennia ago.”

So the King had his Queen killed because she wasn’t following his rules. He then went on a search for a new Queen, found the girl named Esther. She was Jewish, but kept it on the down low. The King really liked her, however anti semitic Haman was appointed prime minister of the empire. He was not very favorable. Enter Mordecai, the leader of the Jews (and Esther’s cousin), he was not cool with Haman and decided he would not bow down to him. Haman did not like this and convinced the King to kill all the Jewish people.

Esther comes thru and tells the King, “Hey I am Jewish, and it’s not okay to kill all these people” Instead they hanged Haman, and his 10 sons, Mordecai became the PM and there was a celebration.

That’s Purim Megan style. I think it’s very interesting and I am super stoked to be learning all this new history and culture. Plus I love parades, and costumes, and triangles.

So there are these cookies called Hamantaschen. They are pocket cookies with fruit filling inside. I had about 12 too many at work yesterday. So freaking good.  I am going to attempt to make them using this recipe .

It is cold, I have been working a lot. I have not been baking a lot. BUT! yesterday I got out of work on time and there was no polo due to the fact that it is cold and wet and hailing. No lie, hail all over SJ. So I took advantage of the opportunity and made small batch chocolate cupcakes. I have never made chocolate cupcakes from scratch before. It was way easy, like stupid easy. I got the recipe from the internets, and I tweaked it a little bit. Same with the frosting. They took like 45 minutes to make and 3 seconds to eat. Today there are 3 left,

Breakfast?

and I am fighting myself to not have one for breakfast. Here is the recipe

  • 1/2 cup of white sugar
  • 1 tablespoon brown sugar
  • 1/2 cup of flour
  • 1/4 cup of unsweetened cocoa powder
  • 1 tablespoon of cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon of baking soda
  • pinch of salt
  • 1 egg
  • 2 tablespoons heavy whipping cream
  • 2 tablespoons oil (I used EVOO, but vegetable oil works as well it’s just what I had)
  • 1/2 teaspoon vanilla
  • 1/4 cup hot water

Take all the dry ingredients and mix them together. Don’t forget the cinnamon,

it is so super clutch here. After those are well mixed add the egg, HWC, oil and vanilla. Once all that is mixed add your hot water and mix that all up, make sure you have no lumps and that it looks thin. I had to add a little extra water to get the consistency that I wanted.

It made 6 cupcakes, which I baked at 350 for 19 minutes. Very specific I know, start with 15 and go from there.  Next I made the Frosting:

  • 4 tablespoons unsalted butter (Softened)
  • 1 & 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 2 teaspoons heavy whipping cream

Now this part is easy, just mix it all up till it looks like frosting. I threw it in the fridge for about an hour while I waited for the cupcakes to cool. Once they cooled I frosted them, flirted with the idea of sprinkles and then decided to keep it classic.

There you have it, I made cupcakes. Now you can as well!
